  • ¾ cup pounded rice (see note)
  • ¼ teaspoon salt

Method

Simmer the rice in salted milk until soft (30 to 35 minutes). Whisk from time to time to beat out lumps. Once the rice is cooked, add the sugar. Preheat the oven to 350°F.

Beat the egg yolks and gradually whisk them into the pudding. Continue whisking until the mixture thickens
