Fennel is a fresh, aromatic flavor that pushes the crisp sour-sweet flavor of a Granny Smith apple forward. The molasses is a direct product of reducing the apple juice and concentrating its flavor, which becomes that of a dark caramel with apple notes; caramel goes very well with apples. The anise hyssop leaf has a flavor that is very similar to fennel but with more intense notes of anise.
