Why These Flavors Work

The combination of espresso, lemon, and milk is considered a classic flavor profile. In many coffee shops, when you order an espresso you automatically get a lemon zest twist with it. The flavor of the lemon enhances the bitterness of the espresso even further but in a pleasant way, and the milk helps cut down the bitterness and adds richness to the dessert, smoothing out the bitter flavors.



Plating Procedure

  1. Place the espresso bombe on the plate. Let it temper for 3 to 5 minutes. Always check before serving it; you do not want to send it out if it is rock-hard. It may take more than 5 minutes.
  2. Place one end of the lemon curd on top of the bombe; the other end will be directly on the plate. Spoon 10 g/.3 oz of espresso paste on this end of the curd.
  3. Using an espresso machine steamer probe or a milk frother, steam whole milk and spoon it onto the bombe. Serve immediately.
