Toasted Milk Panna Cotta Covered in Caramelized Milk Chocolate | Crisp Croissant Crouton | Devil’s Food Cake Soup

Why These Flavors Work

There are three components in this dessert that have Maillard flavors: the toasted milk panna cotta, the caramelized milk chocolate, and the crisp croissant. That alone brings them together. The devil’s food cake soup, which is a purée of chocolate cake, acts as a flavor binder for all the other components.



Plating Procedure

  1. Place the croissant crouton on the plate.
  2. Put the frozen milk panna cotta on top of the crouton.
  3. Pour 90 g/3.17 oz of the devil’s cake soup in the center of the panna cotta.
  4. Place the décor at the center of the bowl, on top of the soup. Wait for the panna cotta to soften for 2 to 3 minutes, then serve.
