Goat’s Milk White Chocolate Tile

Ingredients

  • Tempered goat’s milk white chocolate (replace powdered milk with powdered goat’s milk) 400 g 14.11 oz

Method

  1. Assemble 10 crinkled aluminum plaques (food-grade aluminum sheets, cut to 7.5 cm/3 in wide by 15 cm/6 in long). The crinkled look is obtained by bending the aluminum with a pair of needle-nose pliers. Make sure the aluminum pieces are well washed, sanitized, and polished with a lint-free cloth before using.
  2. Dip the plaques into the tempered chocolate. Let the excess drip off and wipe the chocolate off of the border of the plaques using your fingertips. It is crucial that this be a very thin piece of chocolate because of its large size.
  3. Let the chocolate set in a cool, dry place, and then unmold the chocolate tiles. Reserve in a cool, dry place. Discard after 6 months.
