Orange Velvet Spray


  • Cocoa butter 200 g 7.05 oz 46.51%
  • White chocolate 200 g 7.05 oz 46.51%
  • Natural orange cocoa butter 30 g 1.06 oz 6.98%


  1. Melt all of the ingredients together in a bowl over a hot water bath.
  2. Set up a spray station, a surface that should be covered with plastic to keep the shop clean where you can spray the ice cream.
  3. Fill a compressor canister with the orange velvet spray and spray the ice cream with an even coating of spray. Keep the compressor gun at least 60 cm/24 in from the ice cream to obtain a velvety smooth look. Carefully flip them over and spray the other side.
  4. Reserve frozen during service. Keep covered while frozen to prevent frost accumulation on the surface. Discard after 2 days.
