Why These Flavors Work

Reine-des-prés is a flower that is in the Rosaceae (rose) family and is used to flavor pastry products. As a flower, it has a floral aroma; it sounds redundant but there is no other way to describe its flavor. A classic crema catalana is a custard that is flavored with cinnamon, lemon, and orange.
