Why These Flavors Work

Reine-des-prés is a flower that is in the Rosaceae (rose) family and is used to flavor pastry products. As a flower, it has a floral aroma; it sounds redundant but there is no other way to describe its flavor. A classic crema catalana is a custard that is flavored with cinnamon, lemon, and orange. In this case, it will be flavored with reine-des-prés (see Resources).

  1. Sprinkle an even layer of turbinado sugar over the surface of the portioned pastry cream.
  2. Caramelize it to order using an electric iron; this should be done as part of an “action station,” where things are done to order. You cannot caramelize the sugar too far ahead of time, since this will dissolve the sugar and take its crispness away.
