Nutella Cream | Banana Butter | Crispy Hazelnut Gianduja

Why These Flavors Work

Banana and hazelnut are both frontal flavors that do not cover each other up; they enhance each other. They are both smooth components, highly rich, but the nut flavor of the hazelnut truly pushes and enhances that of the banana; it is similar to the effect of peanut butter and banana together.



Assembly Procedure

  1. Pour the Nutella cream into the large “Lego” mold (see Resources), filling halfway only while it is most fluid so it can fill all of the nooks and prevent formation of air pockets. Let it set slightly in the refrigerator.
  2. Put the frozen banana butter inclusion at the center of the Nutella cream, pushing slightly into the cream. Fill the mold with Nutella cream almost all the way to the top.
  3. Place the crispy gianduja base at the top of the mold, pushing in slightly. The cream should come up just to the top of the mold. If it does not, then fill it with more cream. Make sure the base is at the top of the mold.
  4. Freeze to harden. Set up a spray station, a surface that should be covered with plastic to keep the shop clean where you can spray the cream. Fill a compressor canister with velvet spray.
  5. Once hardened, unmold each piece and spray them in assorted colors of velvet spray, one color at a time with an even coating of spray. Keep the compressor gun at least 60 cm/24 in from the ice cream to obtain a velvety smooth look.
  6. Thaw in the refrigerator and then reserve refrigerated or display.
