Why These Flavors Work

Coffee and chocolate work extremely well together since they both share bitter taste notes; they are also very similar in their physical composition and in the way they are treated once harvested (dried, fermented, toasted, ground). Coffee and chocolate have been sharing the same plate for a very long time.

Assembly Procedure

  1. Pipe 50 g/1.75 oz of the espresso pastry cream into each large choux puff and 30 g/1.06 oz into each small choux puff. Reserve chilled until ready to apply the glaze.
  2. Place the frozen chocolate glaze disks over the filled choux puffs (large on large and small on small).
  3. Once the glaze disks thaw, place the small choux on top of the large choux, centered as best as possible.
  4. Put a small piece of gold leaf on top of the small choux puff.
