Wild Blueberry Compote

Ingredients

  • Blueberries 175 g 6.17 oz 57.85%
  • Sugar 90 g 3.17 oz 29.75%
  • Water 35 g 1.23 oz 11.57%
  • Salt 2 g .07 oz .66%

Method

  1. Combine all of the ingredients and bring them to a boil. Cook until the liquid is reduced by half, about 10 minutes.
  2. Portion the compote into half sphere molds measuring 2.5 cm/1 in diameter by 2.5 cm/1 in deep and freeze. Once frozen, they can be unmolded. Reserve frozen for up to 2 months.
