Method

  1. Preheat a convection oven to 160°C/325°F.
  2. Line a half sheet pan with a nonstick rubber mat. Do not coat the border with nonstick oil spray; the angel food cake needs something to hold onto while it bakes. It will collapse when it comes out of the oven
