Ingredients

  • Peeled, cored, and finely diced pineapple 350 g 12.35 oz 62.5%
  • Sugar 200 g 7.05 oz 35.71%
  • Lemon juice 10 g .35 oz 1.79%

Method

  1. Combine all of the ingredients in a small sauce pot. Cook over medium-high heat until the mixture reaches 68° Brix.
  2. Cool to room temperature.
