Pakoras, known as bhajis in some places, are versatile snacks that can be made using prawns (shrimp), fish pieces or vegetables. The besan flour and pomegranate seeds make a tangy flavoursome batter. Mango chutney and mint chutney go well with pakoras.

Ingredients

  • 600 g (1 lb 5 oz) prawns (shrimp)

Method

Peel and devein the prawns, then cut into small pieces. Put the besan flour in a bowl and add 2 tablespoons of water, or enough to make a thick batter, mixing with a fork to beat out any lumps. Add the remaining ingredients, except the oil, to the batter, season with salt and mix well.
