Panch phoron is a five-spice mix used to flavour vegetables and pulses. The mix is fried at the beginning of a dish, or fried and added as a final seasoning (tarka).


  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 1 teaspoon


Grind all the spices to a fine powder in a spice grinder, a pestle and mortar, or with a grinding stone. Store in a small airtight container until you need it.
