The ‘bonne femme’ in this case is Madame Labadie of Nérac, who grows the biggest and best leeks in the entire region. Fran has slightly adapted her family recipe, but if you want to be entirely authentic, substitute two Vache Qui Rit cheese triangles for the fromage frais. Madame Labadie has been making soup this way since the war, she tells me, and completely disapproves of such frivolities as fromage frais.
