These simple, clean, fresh flavours are perfect for a hot summer’s day.
Peel the cucumbers and cut in half lengthways. Run a teaspoon down the middle to remove the seeds, then slice finely at an angle and place in a bowl. Chop the dill and add to the bowl along with the lemon juice, olive oil and seasoning, then mix well and leave to marinate for 30 minutes.
