This is a terrific way to enjoy the many different varieties of potato that are still available, in gleeful defiance of EU regulations, on markets all over France.


  • 600 g small waxy potatoes
  • 2 tbsp vinegar
  • 1 clove of garlic, crushed, peeled and chopped
  • 1 red onion, sliced
  • 300 g small tomatoes, sliced
  • 3 tbsp olive oil
  • sea salt
  • freshly ground black pepper
  • bunch of celery leaves, chopped
  • bunch of chives, chopped
  • bunch of flat-leaf parsley, chopped


    Wash the potatoes and steam for 25 minutes. Slice while still warm and place in a bowl.

    Add the vinegar, toss and leave to cool for 10 minutes.

    Just before serving, add the garlic, onion, tomatoes, olive oil, seasoning, celery leaves and herbs, and mix well.
