This is a delicious way to prepare grated carrots; the result is sweet, spicy and addictive. I’m happy to eat this on its own as a main dish; but it works well with grilled chicken or fish, or as part of a larger selection of salads and cold meats.

Ingredients

  • 700 g carrots
  • 1 tbsp white wine vinegar
  • 3 tbsp

Method

Grate the carrots into a bowl. Mix together the vinegar, honey, paprika, sesame oil and seasoning, add to the carrots, and stir through. Leave to infuse for 1 hour. Sprinkle with the toasted sesame seeds and serve.
