Purple sprouting broccoli only ever seems to be with us for about two weeks a year, so it’s essential to make the most of this wonderful vegetable while it’s in season. This recipe relies on quick steaming to ensure that none of the bright colour and firm texture of the broccoli is lost; and the anchovies and lemon add just enough of a contrast to enhance, rather than overwhelm, the delicate flavour.


  • 400 g purple sprouting broccoli, trimmed
  • 100 g anchovy fillets
  • 1 red chilli
  • zest and juice of 1 unwaxed lemon
  • sea salt
  • freshly ground black pepper
  • olive oil


    Steam the broccoli for 4 minutes. Cut the anchovy fillets into thin lengths, slice the chilli very finely and place in a bowl with the lemon zest and juice, seasoning and olive oil. Add the broccoli, mix well and serve.
