This is really such a simple dish that it hardly counts as a recipe at all – although it’s still my all-time favourite seaside picnic dish. In France, cooked prawns are available at roadside stalls all down the coast, of course, but nothing beats the freshest, sweetest Atlantic prawns, served with lemon, lime and a glass of chilled Muscadet...


  • 2 kg large prawns, raw
  • 3 lemons, cut into wedges
  • 3 limes, cut into wedges


    Heat a large pan of water and, when boiling rapidly, add all the prawns. Bring back to the boil, cover and simmer for 2 minutes. Drain and refresh under cold water and chill in a colander in the fridge. Serve with the lemons and limes.
