Quite a number of classic French desserts seem to come to us via various members of the clergy. I’m not sure who the original cardinal was (though Hike to think it was Richelieu, the arch-enemy of Dumas’ Three Musketeers), but this has got to be one of the most delicious ways of serving fresh peaches. Fran advises sieving and blitzing the raspberries, while I prefer the coulis to be rather more as Nature intended.
