Method

For almond croissants

Follow the instructions as above, and as soon as you remove the croissants from the oven, cut them in half horizontally and spread with almond paste. Sandwich together, spread a little almond paste on top, and sprinkle with toasted almonds and a dusting of icing sugar. (You can buy almond paste from a delicatessen, or make it yourself by blitzing 100 g almonds, 150 g unrefined caster sugar and a small knob of butter in a food processor.)
