  • Β½lb coarse ends of salt pork, sliced or chopped
  • 3 tablespoons vegetable oil
  • 2lb boiled potatoes, sliced
  • 1 tablespoon chopped fresh sage or 1 teaspoon Powdered sage


    Wipe the salt pork with a damp cloth and fry it in the oil. Discard the meat, season the potato with the sage, and fry in the drippings in the pan. Turn once.
