Pork Cake

• 8oz fat salt pork
• 12oz sugar
• 8oz

Mince the pork finely and mix with the sugar and black treacle. Sift together the flour, soda and spices. Add the flour gradually to the sugar mixture, alternating with small quantities of coffee. Beat well and add a little more flour if necessary to make a stiff batter. Put into a greased loaf tin and bake at 325°F, 170°C, gas mark 3 for one hour. Use as a dish for High Tea or afternoon tea, l
