This is Sasha’s very favourite pudding and has become a real family staple: one of those puddings that gets wheeled out when we have guests over, and rarely lasts more than one sitting. A ‘no-bake’ cheesecake with a soft creamy texture, the buttery ginger biscuit base and zingy lime cheesecake layer results in a spectacular flavour combination.
