Chocolate cakes have always been Sofia’s favourites, so I’ve had plenty of practice in perfecting these and making them the very best they could be. The deeply chocolatey but light and fluffy sponge topped with a rich and intense chocolate buttercream makes these cupcakes very hard to resist!

Ingredients

  • 150 ml dairy-free milk
  • 1 tsp lemon juice
  • 1 tsp

Method

  1. Preheat the oven to 180°c and line a cupcake tin with paper cases.
  2. In a jug, combine the milk, lemon juice, vanilla (if using) and bicarb. Set aside.
  3. In a large bowl, combine the flour, cocoa powder and salt. Stir in the sugar.
