Spicy Tomato Relish

  • 2 shallots, finely chopped
  • 1 clove of garlic, crushed
  • ½ tbsp


  1. Sauté the shallot and garlic in the olive oil until fragrant but not coloured.
  2. Add the tomatoes, vinegar, sugar, smoked paprika and dried chilli. Season with a little salt and pepper, stirring everything well.
  3. Simmer gently for 10 minutes until the mixture is jam-like.
  4. Allow the relish to cool, then taste and adjust the seasoning if required
