- 2 shallots, finely chopped
- 1 clove of garlic, crushed
- ½ tbsp
Method
- Sauté the shallot and garlic in the olive oil until fragrant but not coloured.
- Add the tomatoes, vinegar, sugar, smoked paprika and dried chilli. Season with a little salt and pepper, stirring everything well.
- Simmer gently for 10 minutes until the mixture is jam-like.
- Allow the relish to cool, then taste and adjust the seasoning if required
