Cookies and Cream Cloud Pie

I’m not sure if a cloud pie is a well-known thing, but it is such a great description for this cheesecake/mousse cake mix-up. The lightly whipped cream gives a wonderfully fluffy texture to the airy cheesecake layer, and the little cookie crumbs add a hint of texture. This is the perfect chilled, delicate, light pudding for warm days. For a gluten-free version simply use suitable cream cheese, cream, and biscuits.
