There is nothing like a chocolate cookie, but so often they’re more average than amazing. These, however, are in the realms of awesome. They’re the kind where you take a bite and immediately sigh with pleasure: deeply chocolatey, just the right kind of chew yet also crisp enough… these are up there with the very best.

Ingredients

  • 75 g dairy-free margarine
  • 60 g soft brown sugar

Method

  1. Cream the margarine, sugars, and salt together.
  2. Gently mix in the flour, cocoa and bicarbonate to form a soft dough.
  3. Stir in the chopped chocolate until evenly distributed.
