This is a brilliant Christmas cake recipe, although there’s no reason why you couldn’t enjoy it at any time of year as a teatime treat. It’s rich with plenty of dried fruit but remains light and moist. It’s so good it’s even been finished in just two sittings, which is quite an achievement for a large fruit cake!

Ingredients

  • 2 tbsp brandy or apple juice
