This recipe forces puff pastry to behave a bit like a choux bun. Yes, I admit it’s a cheat, but it’s almost impossible to make a good egg-free choux, which is what I’m after here, and this does the job very well. Once you add the filling and sauce to the hollow puff pastry buns, you really do get a profiterole effect.

  1. Preheat the oven to 240°c and line a muffin or cupcake tray with paper cases.
