  • 6 good-quality vanilla beans
  • 1 cup [240 ml] clear unflavored vodka or rum

Method

Cut the pod in half lengthwise, scrape out the seeds, and transfer the pods and the seeds to a small, dry glass container that can be sealed so it is airtight. Pour in the vodka and press the beans down to submerge them completely. Seal tightly and shake. Store in a cool, dark place for 6 to 8 weeks before using; shake occasionally. Discard the pods and use the liquid with the seeds as a flavor
