Green Cardamom Extract

• 20 green cardamom pods, coarsely cracked
• ½ cup [120 ml] clear unflavored vodka

Place the cardamom husks and cracked seeds into a small, dry glass container that can be sealed so it is airtight. Pour the vodka over the cardamom, seal the lid tightly, and shake. Store in a cool, dark place for 6 to 8 weeks; shake occasionally. Strain the liquid before using.
