Whenever my grandfather picked up extra coconuts on his trips to the market, my grandmother would separate the flesh from the mature coconuts and dry them in the sun to increase their shelf life. The dried coconut pieces were then ground as needed, and they often made an appearance in curries like this one. Serve this chicken curry over a bowl of warm rice or with large chunks of sourdough bread to sop up the flavorful liquid.
