This is my favorite rice dish—favorite because it always works and because it is as versatile as an omelet for a quick, cheap meal. It can also be done in bulk. We served it to the cast of Who’s Afraid of Virginia Woolf after their opening night in Wellington. The particular recipe we used is called Boston Rice Bake.
