*Toheroa is the world-famous New Zealand green clam unlike anything else in the world. It is a great delicacy and can be ordered at good stores.

Recipe to produce 4 portions U.S.A. Imperial Metric
White Sauce cups 1 pint 570 milliliters
Toheroa paste (usually tinned) 5 tbsp. 5 tbsp. 75 grams
Lemon juice 1 tbsp. 1 tbsp. 15 milliliters
Dry white wine 2 tbsp. 1 fl. oz. 30 milliliters
Indian saffron ¼ tsp. ¼ tsp. ¼ tsp.
Monosodium glutamate (msg) ¼ level tsp. ¼ level tsp. ¼ level tsp.

Method

Method of Preparation

Make white sauce—measure paste, lemon juice, wine, saffron, and msg.

Method of Cookery

  1. Stir all ingredients into white sauce—reheat and serve.
  2. Usually placed over poached fish, but is fabulous when spooned over Broiled Lobster Tails.
