We used to cook this dish often at The Gate, when we were open for weekend brunch. It is quick to prepare and makes a lovely, comforting breakfast. We love the flavour of tarragon in a hollandaise, but if unavailable replace with chives.

  • fresh spinach 200 g (7 oz), washed well
