Haloumi cheese, with its incredible texture, makes an excellent base for a very satisfying brunch. Using the marinade given here, the cheese can be skewered on sticks for a barbecue, or simply sliced and pan-fried, and served with salad leaves or our Butter Bean, Pickled Lemon, and Mint Salad.


  • haloumi cheese 400 g (14 oz)
  • red onion 1 small, roughly chopped


  1. Cut the haloumi into large 2cm (¾in) cubes, and place on a clean tea-towel to absorb excess water for 10 minutes.
  2. While the haloumi is drying, place all the other ingredients in a food processor and blend to a paste. Coat the haloumi cubes well with this marinade.
