Tortillas are tasty and versatile, both at The Gate and at home. A quesadilla is basically Mexican cheese on toast, and it’s gorgeous. Quesadillas can be made into a more substantial meal by serving corn salsa and a guacamole with them.

Ingredients

  • flour tortillas 8 medium
  • olive oil 1 tbsp

Method

  1. Preheat the oven to 220°C/425°F/gas mark 7.
  2. For the filling, pan-fry the mushrooms in the olive oil for 5–6 minutes
