These lovely Thai-food-inspired fritters are quick to prepare and taste wonderful with a clear chilli sauce.


  • sweetcorn 4 ears, kernels removed
  • spring onions bunch, finely chopped


  1. Place the sweetcorn and all the remaining ingredients, apart from the oil, in a blender. Pulse two or three times, but not enough to purée the mixture. Allow to stand for 15 minutes. The mixture will be quite loose.
