This simple Japanese deep-fried dish is quick to prepare and can be made with almost any vegetable of your choice. At The Gate we usually serve it with a clear chilli sauce. You should be able get black sesame seeds at any Asian shop; if you can’t find them, use white ones instead.

Ingredients

  • red pepper 1, deseeded and cut into 2cm ¾in) wide strips
  • aubergine 1 small, sliced into 3mm (1/18 in) thick rounds
  • bro

Method

  1. Prepare all the vegetables shortly before cooking.
  2. To make the batter, combine all the ingredients in a food processor. The batter should be thick enough to coat the vegetables but loose enough to shake off any excess.
  3. Heat the oil in a heavy-based pan until almost smoking.
  4. Dip the vegetables individually into the batter, then deep-fry them in
