Sweetcorn and Coconut Soup

Adrian became a real fan of corn soups when he was living in the United States in his early 20s. He particularly enjoys the subtle flavour of corn blending in with other strong flavours.

Ingredients

  • butter 25 g (1 oz)

Method

  1. In a large saucepan, heat the butter and olive oil and add the thyme and garlic, quickly followed by the onion and sweetcorn. Sauté on a medium heat for 6–7 minutes, allowing the onion and corn to brown lightly and caramelize.
  2. Add the sweet potato, coconut milk, nutmeg, and stock. Bring to the boil and simmer for 30 minutes.
  3. Purée with a hand-held blende
