Growing up in our home, we regularly saw many new and unusual vegetables and fruit, but travels to India and Brazil highlighted the great taste and versatility of one vegetable in particular: the plantain. This sweet-and-sour soup, with its creamy texture, is very popular at The Gate.

Ingredients

  • Spanish onion 1, finely chopped
  • garlic cloves 2, crushed
  • red chilli

Method

  1. Sauté the onion, garlic, chilli, and ginger in the olive oil for 5–6 minutes until the onion is translucent.
  2. Add the plantain and sugar and continue to cook on a medium heat until the plantain begins to caramelize: about 7–8 minutes.
  3. Add the coconut milk and water, bring to the boil, and simmer on a medium heat for about 20 minutes.
