This moreish sweet-and-sour yogurt dressing is inspired by the cuisine of Kerala in southern India, where this style of dressing is used in many dishes.

Ingredients

  • butter beans 500 g (1 lb 2 oz), cooked

Method

  1. To make the dressing, mix together the lime juice, tamarind paste, maple syrup, yogurt, and black mustard seeds.
  2. Toss together with the butter beans and spring onions.
