Corn is one of those vegetables which, while not undereaten, is underutilized, and tends to be cooked in only one way. One of our favourite uses of this vegetable is as a base for salsas, in which the natural sweetness combines very well with the chilli and lime.

Ingredients

  • sweetcorn 1 ear
  • olive oil 2 tbsp
  • white onion

Method

  1. Brush the sweetcorn with a little of the olive oil and sear in a dry, hot pan until lightly charred in parts. Remove the corn from the cob with a sharp knife. Put into a dish.
