There is nothing quite like munching your way through a bowl of tortilla chips with a fresh, homemade salsa and a nice glass of red wine. The chipotles – which are large, dried, and smoked jalapeño chillies – can be replaced with regular fresh red chillies, but it is worth going out of your way to find them because their smoky flavour gives the salsa a distinctive finish.
