Muzhuzhi is a favorite Georgian dish that exists in both hot and cold versions. I have chosen to present the cold dish here, because many people are squeamish about eating pig’s feet. In this version, the feet are removed before serving, having already imparted the necessary body and flavor to the broth. Cold muzhuzhi is particularly refreshing in the summer heat.
