Another modern dessert that often graces urban tables is lemon tea cake, a light, dry cake that is not too filling. Using both yogurt and baking soda, it combines traditional Georgian and European baking methods.

Ingredients

  • 8 tablespoons (1 stick) unsalted butter, softened
  • 1 cup confectioners’

Method

Preheat the oven to 350°F.

Cream together the butter and confectioners’ sugar.

In a separate bowl, beat the eggs lightly; stir in the yogurt. Add this mixture to the creamed butter and sugar and beat with a whisk or in a mixer until light.
