Pelamushi is one of the most interesting and original Georgian foods. Brilliantly purple, cut into diamonds and arranged on a decorative platter, pelamushi is deceptive: No one would guess that it is a simple mixture of concentrated grape juice and cornmeal, a grape-flavored polenta. The only similar recipe I have seen is for panvinesco, prepared in the wine-growing regions of Italy and calling for vino cotto or cooked wine mixed with semolina.
