Once velveted, the fillets remain neat and tender when gently stir-fried tip with vegetables in a glazy sauce. This is an excellent main dish, in which the succulent fish contrasts with the crisp vegetables.
Pour hot water over the mushrooms and soak for 30 minutes. Rinse and squeeze dry. Cut them in half. Rinse and drain the sliced bamboo shoots thoroughly. Rinse and dry the snow peas; string by snipping off the tips and pulling along the edge. Place these, plus ginger and garlic, in separate piles on a working platter
